These Banana Nut Muffins with Chocolate Chip Streusel have the perfect texture and taste while providing you a “skinny” version of a popular bakery favorite.  The combination of the banana, oatmeal, walnuts, brown sugar and chocolate chips provide your taste buds with a variety of flavors and textures that your mouth will crave.   These muffins are perfect for rounding out those grab-and-go breakfasts,  as a fabulous addition to any weekend brunch or a great mid-day snack with some coffee or tea.  One bite, and they may just become one of your “go to” recipes.

Skinny Banana Nut Muffins with Chocolate Chip Streusel

Makes 15 muffins. 1 muffin per serving. Nutrition: Weight Watchers Points + 5 ~ Calories 169 ~ Fat 4.8 g ~ Carbs 28 g ~ Fiber 1.9 g ~ Protein 4.3 g

Ingredients

  • 2 extra ripe bananas mashed
  • 6 oz container of Vanilla 0% Chobani greek yogurt
  • 1 large egg
  • 1 tsp good quality vanilla extract
  • 1/2 cup sugar
  • 2 cups of Multigrain Baking Mix
  • 1/2 cup chopped walnuts
  • 1 packet of original flavor oatmeal (.98 oz; I used Quaker Organic)
  • butter flavor cooking spray
  • …….streusel…..(combine both items below in a bowl and reserve for topping)
  • 1/2 cup of brown sugar (not packed)
  • 1/4 cup of mini chocolate chips

Instructions

  1. Preheat oven to 375 degrees and prepare muffin tin with butter flavor cooking spray. (spray each compartment)
  2. In a large mixing bowl whisk together the mashed bananas, yogurt, vanilla and egg.
  3. In another mixing bowl mix together the dry ingredients which include: multigrain baking mix, oatmeal & sugar
  4. Combine the dry ingredients with the wet ingredients.
  5. Fold in walnuts.
  6. Fill muffin tins 2/3 full and then add 1.5 tsp of streusel on top each muffin bake for 25 minutes **For extra fluffy & moist muffins do not over mix.
