Roasted Balsamic Asparagus


 If you like Asparagus and you haven’t roasted them yet….you are missing out on an easy & delicious side dish that goes with just about anything.  I started making this when I saw it on the Rachel Ray show years ago and continue to make it regularly.   The leftovers are also very useful in your morning omlet; stir fry’s or just snacking with dip.  YUM!!    ENJOY this quick and easy recipe.

Roasted Balsamic Asparagus

***ENTIRE RECIPE is Only 1p+ Weight Watchers! Makes 3 servings of approximately 4 spears per serving: Calories 48.3 ~ Fat 1.5 g ~ Carbs7.1 g ~ Fiber 2.7 g ~ Protein 1.3 g


  • 12 oz Asaparagus; ends trimmed
  • 2 tsb balsamic vinegar
  • 1 tsp Extra Virgin Olive Oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • **optional** Grated Parmesan Cheese


  1. Preheat Oven to 500 degrees
  2. Line a large baking pan with foil
  3. Toss all the above ingredients together
  4. Bake for 10-15 minutes until parts of Asparagus turns brown
  5. Garnish with Parmesan Cheese** optional
  6. Enjoy!!
