If you like Asparagus and you haven’t roasted them yet….you are missing out on an easy & delicious side dish that goes with just about anything. I started making this when I saw it on the Rachel Ray show years ago and continue to make it regularly. The leftovers are also very useful in your morning omlet; stir fry’s or just snacking with dip. YUM!! ENJOY this quick and easy recipe.
***ENTIRE RECIPE is Only 1p+ Weight Watchers! Makes 3 servings of approximately 4 spears per serving: Calories 48.3 ~ Fat 1.5 g ~ Carbs7.1 g ~ Fiber 2.7 g ~ Protein 1.3 g
Ingredients
- 12 oz Asaparagus; ends trimmed
- 2 tsb balsamic vinegar
- 1 tsp Extra Virgin Olive Oil
- 1/2 tsp salt
- 1/2 tsp pepper
- **optional** Grated Parmesan Cheese
Instructions
- Preheat Oven to 500 degrees
- Line a large baking pan with foil
- Toss all the above ingredients together
- Bake for 10-15 minutes until parts of Asparagus turns brown
- Garnish with Parmesan Cheese** optional
