Mango Avocado Salsa………doesn’t it just sound like Summer?  This is my new favorite dip, snack, topper….etc.   It is a truly refreshing dip and taste great on top of my Chipotle Baked Chicken (recipe coming in a few days)

 

 

Mango Avocado Salsa

Ingredients

  • 2 Avocados; cut in small cubes
  • 1 large Mango, cut in small cubes
  • 1/2 cup diced Vidalia Onion
  • 6 Campari Tomatoes; diced
  • 2 Garlic Cloves; minced
  • 1 Jalapeno, diced
  • 1/2 cup (not packed) of chopped Cilantro
  • 1 tsp Salt
  • 1/2 tsp Cumin
  • 1 Lemon; juiced

Instructions

  1. In a large bowl, Combine all the ingredients Above & ENJOY!
  2. **to store the salsa for later, reserve the pits from the avocado and add to your storage bowl **
